After we have had a grilled or fried chicken menu, we are left with some of the chicken. This remaining chicken will be the basis of our salad and other Mediterranean ingredients and mozzarella, an Italian touch.

The night before, I had a roast chicken for dinner, so I used the meat from the chicken breast and a leg in this salad, about 450 g, without skin and bone.
I also used a mix of baby leaf salad, 110 g, but you can use any lettuce or ruccola.
The rest of the ingredients used are seedless red grapes (200 g), half a cucumber ( 200 g), one red onion and cherry tomatoes, about 150 g. And to add some of the tastes of Italy, I used 125 g of mozzarella.
Preparing the Ingredients
The simplest is first to prepare the ingredients, and then we will make the salad. We start with the chicken, which we will cut into strips after removing the skin and bones.
Next comes the red onion, which we cut into slices after peeling.
Baby plum tomatoes and grapes are enough if we cut them only in two.
And cut the cucumbers in half lengthwise, then slice them not very thin.
It is left to prepare mozzarella ball, that after I cut it in half, I sliced it and I will add it at the end.
How to Make the Best Homemade Chicken Salad Recipe?
For this, we take a larger bowl for the salad in which we will mix the ingredients. I start with the baby leaves salad that I put first.
I sprinkled the sliced red onions on top of the baby leaves.
Next is the sliced cucumber that we put over the onion.
Then the grapes and cherry tomatoes.
And at the end, I added the chicken and mozzarella. I will put them after I mix everything so that they do not break too hard.
Lightly mix the ingredients in the bowl and season. For this, we make a separate dressing or add to the bowl directly the following ingredients as I did:
- 4 tablespoon extra virgin olive oil,
- 4 tablespoon Greek yoghurt,
- one and a half lemon juice,
- salt,
- ground pepper,
- one teaspoon of dried oregano.
All I have to do is add sliced mozzarella, which I incorporated into the salad with light movements.

Serving the Salad
You can leave the salad in the fridge for about 10-15 minutes, to let the flavours blend, then serve it on a flat plate, with a glass of white wine. Awesome!
