This turkey fried rice is perfect for a busy weeknight – it's quick, easy, and totally delicious! It is perfect for a light lunch or dinner, and we do not have to stay in the kitchen all day.

Okay, so this fried rice recipe isn't exactly how my family made it. We always used pork! But I'm a huge fan of turkey, so I decided to try it in this recipe. You won't believe how good it is!
Ingredients
As you can see from the turkey fried rice recipe, we need a few ingredients, only meat, rice and some vegetables. I will use in this recipe about 600 g of turkey breast cut into small cubes, but boneless turkey thighs can be used just as well.
I chose to use two cups of long-grain rice, but you can also use round or risotto rice. We still need a medium-sized onion and some vegetables, and I will add another 350 g of frozen carrots and peas.
And that's about it, and these would be the ingredients!
Preparing the Ingredients
Start by cutting your whole turkey breast into 1.5-2 inch cubes. This ensures the turkey cooks quickly and evenly. Plus, smaller pieces are easier to eat and look nicer when served. We will clean the onion and chop it as small as possible.
I poured the two cups of rice into a sieve and rinse it well under a stream of water until it ran clean, and I then let it drain.
With the ingredients ready, we can start cooking!
How to Make the Simple Turkey Fried Rice Recipe?
To give you an idea of the next steps, I will tell you that we will make a turkey stew first. After that, we will add the rice and the vegetables, and we will cook them together until the rice is done.
Make a Stew
So we start by heating 50 ml of sunflower oil in a larger saucepan and putting the chopped onion to fry.
Fry the onion for about two minutes, stirring from time to time; season with a teaspoon of sea salt and a teaspoon of Hungarian sweet paprika powder, then put the turkey meat in the pan.
Let it fry over medium to low heat, taking care not to burn the paprika because it will become bitter. If it is too dry, you can add a little water, about 100 ml.
Add the Vegetables and Rice
Because we have turkey breast cut into small cubes, it is enough to fry for only about fifteen minutes, and we can add rice and frozen vegetables.
Stir and let the rice fry in the turkey meat juice and the vegetables thaw a little, about two or three minutes.
I added two cups of hot water (the same amount as rice) and a tablespoon of the vegetable mix for soups, mixed and simmer over medium heat for about ten to fifteen minutes.
The dish is ready when the rice is done and has absorbed all the liquid from the pan. If the liquid is gone and the rice is not ready, you can add a little warm water.

Serving the Dish
Serve the turkey fried rice as such, warm, on a flat plate or in a bowl and with some pickles next to it, I chose pickled cucumbers, but it also goes well with beetroot salad.
