One day I remembered an old recipe, which marked my childhood and which I want to share with you. Is about the best sweet cornbread recipe in a world, with cottage cheese and yoghurt, so delicious.
As you know cornbread is made from cornmeal and is a typical American recipe. I will show you a recipe from Transylvania, a sweet cornbread with cottage cheese.

This recipe is less known in the world, but it is a delicious dessert, like another recipe of mine, the sweet fried semolina pudding.
Let's Show You the Ingredients
The main ingredient is cornmeal from which I used 250 g.
To the cornflour, we will add 150 g of wheat flour, of any type, and a sachet of baking powder.
And of course the cottage cheese, I put about 500 g of fresh cheese, or you can also use cheese cream.
I also need 4 eggs, which we will separate the yolks from the whites.
We need another 200 g of caster sugar and 100 g of unsalted butter at room temperature.
We will flavour the cake with two sachets of vanilla sugar (or a teaspoon of vanilla essence) and lemon zest. To make the dough softer, we will add 400 g of Greek yoghurt.
How to Make the Best Sweet Cornbread Recipe in a World?
This recipe is very simple and quick to make but is so tasty.
In a bowl, put the egg yolks, butter and sugar and mix everything, with a hand mixer, until you get a homogeneous paste.
Add the yogurt and vanilla sugar (or vanilla essence) and continue mixing.
Now we can add the cottage cheese together with the lemon zest.
Separately, in another bowl, mix the two types of flour (corn and wheat) together with the baking powder.
Pour the flour over the rest of the ingredients and mix until incorporated.
We take the egg whites and mix them until we get a foam.
Pour the foam over the dough and mix gently with an egg beater, until completely incorporated.
The composition was ready, I let everything rest for about 30 minutes to soften the cornmeal.
Baking the Cake
We took a baking tray, which we lined with baking paper, and pour the composition into the tray.
With a spatula, level the soft dough so that it is evenly spread throughout the tray.
Heat the oven to 180 degrees, put the tray and bake for about 35-40 minutes, until we get a golden colour.
Serving the Corn Bread
I took out the cornbread on a chopping board, and while it was still hot I sprinkled it with powdered sugar.
After it cooled completely, I cut slices of cake and served on a plate.
You can sprinkle with more powdered sugar and pour a little honey on top.
