Why You'll Love This Recipe

  • Guaranteed Juicy Meat: Gently tenderizing the pork loin and flash-searing it prevents the chops from drying out or becoming tough.
  • Rich, Savory Layers: Sautéed portobello mushrooms, smoky ham, sweet onions, and a touch of aromatic marjoram pack deep umami flavor into every forkful.
  • Quick 35-Minute Dinner: Simple prep and a fast 10-minute oven finish make this ideal for busy weeknights.
  • Bubbly Melted Cheese Blanket: Mozzarella melts into a rich, golden topping that locks in the meat's natural moisture while baking.
  • Easily Customizable: Swap in your favorite meltable cheeses, switch the mushroom varieties, or tailor the seasonings to what you have in your pantry.

Key Ingredients & Substitutions

  • Pork Chops (500 g / ~1.1 lbs): Boneless pork loin chops work best for even pounding and quick cooking. You can also use bone-in loin chops; just trim the bone edges slightly so the meat lies flat in the baking tray.
  • Portobello or Cremini Mushrooms (250 g / ~9 oz): Earthy mushrooms add a rich, meaty texture to the topping. Chestnut mushrooms or standard white button mushrooms also work well.
  • Cooked Smoked Ham (100 g / 3.5 oz): Adds a savory, salty, and smoky note to the mushroom sauté. Substitute with cooked smoked bacon, diced pancetta, or prosciutto for a deeper flavor.
  • Onions & Fresh Garlic: Two medium yellow onions and two minced garlic cloves form the sweet, aromatic base for the sautéed topping.
  • Grated Mozzarella (125 g / ~4.5 oz): Low-moisture grated mozzarella gives that classic, gooey cheese pull. You can mix in provolone, fontina, or mild gouda.
  • Grated Parmesan (1 tbsp): A light sprinkle of Parmesan or Pecorino Romano adds a sharp, nutty punch to balance the mild mozzarella.
  • Fresh Tomato (1 medium): Thinly sliced and layered beneath the cheese to add fresh acidity, cutting through the rich toppings.
  • Herbs & Seasonings: A blend of sea salt, coarse black pepper, onion granules, and dried marjoram. Marjoram is a classic pairing for pork and mushrooms; if unavailable, substitute with dried thyme or savory.
  • Olive Oil: Used for flash-searing the pork chops and sautéing the aromatics.

Step-by-Step Instructions

1. Prep the Aromatics and Topping

  • Clean the mushroom caps and dice them into small, bite-sized pieces.

  • Finely chop the onions so they soften quickly and release their natural sweetness.

  • Dice the cooked smoked ham into small cubes matching the size of the mushrooms, and mince the garlic cloves.

2. Tenderize and Season the Pork

Place the pork chops between two sheets of plastic wrap or parchment paper.

Using a meat mallet or the flat side of a rolling pin, gently pound each chop to an even thickness of about 0.5 cm (0.2 inches). Pounding breaks down tight muscle fibers, ensuring an ultra-tender texture.

Season both sides evenly with sea salt, freshly ground black pepper, and onion granules.

3. Flash-Sear the Chops

  • Heat 3 tablespoons of olive oil in a large skillet over medium-high heat until shimmering.
  • Add the pork chops and sear for just 30 to 45 seconds per side until lightly golden.

  • Immediately transfer the chops to a plate and set them aside. Do not cook them through at this stage-they will finish cooking in the oven.

4. Sauté the Mushroom and Ham Layer

  • In the same skillet over medium-low heat, add another splash of olive oil if needed. Sauté the diced onions for 1-2 minutes until soft and translucent.
  • Stir in the minced garlic and diced smoked ham, cooking for 1 minute to release the smoky oils and scrape up any flavorful browned bits from the pan.

  • Add the chopped mushrooms, cover with a lid, and cook for 5 minutes so the mushrooms release their juices.
  • Remove the lid, season with 1 teaspoon of sea salt, black pepper, onion granules, and dried marjoram. Sauté uncovered over medium heat until all excess liquid evaporates completely.

5. Assemble in the Baking Dish

  • Lightly grease a baking tray with 1 tablespoon of olive oil. Arrange the seared pork chops in a single layer, side by side.

6. Bake Until Bubbly and Golden

  • Bake in a preheated oven at 220°C (430°F) for 10 to 12 minutes, or until the mozzarella is melted, bubbly, and toasted golden brown at the edges.
  • Remove from the oven and let rest for 3-5 minutes before serving to allow the juices to redistribute.

Pro Tips for the Juiciest Pork Chops

  • Pound to an Even Thickness: Pounding pork loin to a uniform 0.5 cm ensures every section cooks at the exact same rate, eliminating dried-out edges while waiting for thicker centers to finish.
  • Never Over-Sear in the Pan: The stovetop sear is strictly for flavor and color (the Maillard reaction). Keep it strictly under 1 minute total per chop so the interior stays raw enough for the oven bake.
  • Evaporate All Mushroom Moisture: Always sauté the mushrooms uncovered at the end until the pan is dry. Excess moisture will steam the pork in the oven and dilute the rich crust.
  • Aim for 145°F (63°C) Internal Temp: Modern pork is safest and juiciest when cooked to an internal temperature of 63°C (145°F) with a light blush of pink in the center. Avoid overcooking past 160°F (71°C), which dries out lean pork loin.
  • Use Freshly Grated Mozzarella: Pre-bagged shredded cheese contains anti-caking starches that prevent a smooth, gooey melt. Freshly grating your own mozzarella yields a superior, golden cheese crust.

What to Serve with Cheesy Pork Chops

Because these pork chops are rich, savory, and cheesy, pair them with sides that either soak up the flavorful pan juices or provide a crisp, acidic contrast.

  • Comforting Carbs:
    • Serve alongside fluffy buttered rice pilaf, creamy caramelized onion mashed potatoes, or garlic-herb roast potatoes to catch all the flavorful mushroom juices.
  • Fresh & Crunchy Salads:
    • Pair with a crisp, mayonnaise-free salad like our Easy Tuna Corn Salad (or your favorite cucumber salad) to balance the rich melted mozzarella and savory ham.
    • A light summer garden salad with lemon-mustard vinaigrette.
  • Warm Vegetables:
    • Steamed Green Beans: Lightly tossed with garlic butter and toasted almonds.
    • Roasted Asparagus or Broccoli: Roasted with a squeeze of fresh lemon juice.

Storage & Reheating Instructions

  • Refrigerating: Allow leftover pork chops to cool completely to room temperature. Store them in an airtight container or wrap each chop securely in aluminum foil. Keep in the refrigerator for up to 3 to 4 days.
  • Freezing: While best enjoyed fresh due to the tomato slice and melted cheese, you can freeze cooked chops for up to 2 months. Thaw overnight in the refrigerator before reheating.
  • Best Reheating Method (Oven): Preheat your oven to 175°C (350°F). Place the pork chops in a baking dish, add 1-2 tablespoons of water or broth to the bottom to retain moisture, and cover tightly with foil. Bake for 12 to 15 minutes until heated through.
  • Air Fryer Reheating: Place the chops in the air fryer basket at 160°C (320°F) for 4 to 6 minutes. This warms the meat gently while re-crisping the cheese edges.
  • Microwave (Quick Method): Reheat on medium power (50-60%) in 45-second bursts to prevent the pork loin from becoming rubbery.

Delicious Recipe Variations

  • Crispy Bacon & Sharp Cheddar: Swap the diced ham for cooked, crumbled smoky bacon and replace the mozzarella with sharp yellow cheddar for a rich, pub-style flavor.
  • Italian Caprese Style: Layer a thin smear of basil pesto over the pork chops before adding the sautéed mushrooms, top with sliced vine-ripened tomatoes and fresh mozzarella, and finish with a drizzle of thick balsamic glaze after baking.
  • Spicy Pepper Jack & Chorizo: Replace the cooked ham with diced cured chorizo and use shredded Pepper Jack cheese. Top with a few slices of pickled jalapeños before baking for a smoky, spicy kick.
  • Air Fryer Method: Flash-sear the pork chops as directed, assemble the toppings, and place them in the basket at 180°C (360°F) for 5 to 6 minutes. If you love quick poultry and meat in the air fryer, check out our Crispy Air Fryer Whole Chicken
or Crispy Air Fryer Duck Legs.
  • Keto & Ultra Low-Carb: This recipe is naturally keto-friendly at just 4 g net carbs per serving. To keep sugars even lower, replace the fresh tomato slice with a thin roasted red pepper strip or simply double the mushroom layer.

Frequently Asked Questions

Why did my pork chops turn out tough or dry?

Pork chops become tough almost exclusively from overcooking. Lean pork loin contains very little intramuscular fat, meaning high internal heat forces out its moisture quickly. To guarantee tenderness, always pound the chops to an even 0.5 cm thickness, limit the stovetop sear to 30-45 seconds per side, and remove them from the oven as soon as the internal temperature reaches 63°C (145°F).

Is it safe for pork chops to have a slight pink blush in the center?

Yes. Modern culinary and food safety standards state that whole cuts of pork cooked to an internal temperature of 63°C (145°F), followed by a 3-minute resting period, are completely safe to eat. A faint pink center means the meat has retained its natural juices.

Can I use bone-in pork chops for this recipe?

Yes. Bone-in loin chops work well and add extra flavor. Trim any thick excess fat around the edges and pound the meat evenly around the bone. You may need to add 1 to 2 minutes to the final oven bake time depending on the thickness of the cut.

Can I assemble this dish ahead of time?

Yes. You can sear the pork chops, sauté the mushroom and ham mixture, and assemble the baking tray up to 8 hours ahead. Cover the dish tightly with plastic wrap and refrigerate. When ready to cook, bring the tray to room temperature for 15 minutes, remove the wrap, and bake at 220°C (430°F) for 12 to 14 minutes.

What other cheeses melt well on pork chops?

Low-moisture mozzarella provides the classic stretch and mild creaminess, but you can swap or combine it with Provolone, Fontina, mild Gouda, Monterey Jack, or Gruyère for a sharper flavor profile.

4. Sauté the Mushroom & Ham Layer

Notes

  • Don't Overcook on the Stovetop: The initial sear is strictly for surface browning and flavor development. Keep it under 45 seconds per side to ensure the meat stays juicy after baking.
  • Target Internal Temperature: Pork is at its juiciest and most tender when cooked to an internal temperature of 63°C (145°F) with a light pink blush in the center.
  • Dry Sauté: Ensure all mushroom moisture has completely evaporated before assembling so the pork stays firm and doesn't steam in excess liquid.
  • Cheese Variations: Provolone, Fontina, or mild Gouda can replace or be mixed with mozzarella for distinct melt and flavor profiles.
  • Make-Ahead: You can sear the chops, sauté the filling, and assemble the baking tray up to 8 hours in advance. Keep covered in the refrigerator, bring to room temperature for 15 minutes, and bake as directed.
