Nothing beats the rich aroma of sweet, smoky pork sizzling over hot charcoal in the backyard. These honey glazed pork ribs deliver everything you want from classic barbecue: incredibly tender, juicy meat on the inside and a glossy, sticky caramelized crust on the outside.

Sticky honey glazed pork ribs sliced on a rustic wooden cutting board with a cold beer and roasted potatoes.

The secret to perfectly grilled ribs without burning the honey is a simple two-step method. First, the seasoned ribs cook gently inside a protective baking paper and foil wrap, allowing the meat to braise in its own flavorful juices until tender. Then, we open the packet, brush on a rich paprika-honey glaze, and finish them over the hot grill grates for that signature charred, sticky finish. It is a foolproof outdoor recipe that turns simple ingredients into restaurant-quality BBQ for any weekend gathering.

  • Sticky Honey Glazed Pork Ribs on the Grill

Why You'll Love This Recipe

  • Tender & Juicy Texture: Wrapping the ribs in baking paper and foil allows them to braise gently in their own juices, keeping the meat moist without drying out over the coals.
  • No Burnt Sugar Flare-Ups: Brushing the honey glaze on during the final minutes creates a rich, sticky caramelized finish without burning the sugars over direct heat.
  • Simple Pantry Rub: A balanced blend of sweet honey, brown sugar, sea salt, and paprika builds deep, savory-sweet BBQ flavor using everyday ingredients.
  • Foolproof Grilling: The two-stage method takes the guesswork out of temperature control on a charcoal or gas BBQ grill.

Ingredients You'll Need

This recipe uses a straightforward combination of pantry staples to create both the dry rub and the sticky finishing glaze.

  • Pork Ribs (800 g / ~1.75 lbs): Baby back ribs or spare ribs work best. Baby back ribs cook slightly faster and are leaner, while spare ribs offer rich marbling. Make sure to peel away the thin membrane (silverskin) from the back of the rack so the rub penetrates the meat.

  • Honey (2 tablespoons): The foundation of the glaze. A good-quality wildflower, clover, or acacia honey adds floral sweetness and gives the exterior its signature sticky, glossy sheen.
  • Brown Sugar (1 tablespoon): Light or dark brown sugar adds deep molasses undertones that help the ribs caramelize over the charcoal.
  • Paprika (1 tablespoon): Sweet paprika gives the ribs a rich red color and gentle warmth.
  • Fine Sea Salt (1 teaspoon) & Black Pepper (½ teaspoon): Standard seasoning to balance the sweetness of the glaze and draw out the pork's natural savoriness.
  • Olive Oil (1 tablespoon): Mixed with the reserved spice rub to create a brushable basting paste for the final sear on the grill.
Ingredients for grilled honey glazed pork ribs: honey, brown sugar, paprika, sea salt, black pepper, and olive oil.

Easy Substitutions & Variations

  • For Extra Smokiness: Swap standard sweet paprika for smoked paprika (Spanish pimentón) to enhance that wood-fired grill flavor.
  • Honey Alternatives: You can replace honey with pure maple syrup or agave nectar for a slightly different sweet profile.
  • Add a Spicy Kick: Mix in ¼ teaspoon of cayenne pepper or red pepper flakes into the spice rub for sweet-and-spicy ribs.
  • Sugar Swap: Coconut sugar or dark muscovado sugar can be used 1:1 in place of standard brown sugar.

How to Make Grilled Honey Glazed Pork Ribs (Step-by-Step)

1. Season & Marinate

  • In a small bowl, combine the brown sugar, paprika, sea salt, and ground black pepper.
  • Brush the surface of the ribs with honey so the spices adhere evenly to the meat.

  • Sprinkle the spice rub over both sides of the ribs and massage it well with your hands. Save a spoonful of the dry spice mix in the bowl for your basting glaze later.

  • Wrap the seasoned ribs tightly in plastic wrap and chill in the refrigerator for at least 1 hour (or overnight) to let the flavors infuse.

2. Prepare the Basting Glaze

  • Drizzle 1 tablespoon of olive oil into the bowl with the leftover spice rub.
  • Stir well to form a rich, smooth basting paste and set it aside for the final grilling phase.

3. Wrap for Tenderness (The Double-Layer Trick)

  • Remove the ribs from the refrigerator and discard the plastic wrap. Drizzle the meat lightly with a few drops of oil.
  • Wrap the rack tightly first in baking paper (parchment), then wrap securely in a second outer layer of heavy-duty aluminum foil. The paper keeps the ribs moist and prevents the meat from sticking to the foil or reacting with the metal.

4. Grill Low with the Lid Closed

  • Preheat your charcoal or gas BBQ grill to medium, indirect heat (around 180°C-200°C / 350°F-400°F).
  • Place the wrapped foil packet on the grill grates away from direct open flames.
  • Close the grill lid and cook for 1 hour and 30 minutes, flipping the packet once halfway through for even heat distribution.

5. Glaze & Caramelize Over the Grates

  • Carefully remove the foil packet from the grill and open it (watch out for hot escaping steam).
  • Place the ribs directly onto the grill grates over medium coals.
  • Brush the top generously with your reserved olive oil and spice glaze paste.
  • Grill uncovered for 8 to 10 minutes, turning once and basting, until the sugars caramelize into a sticky, glossy crust with lightly charred edges.

6. Rest and Serve

  • Transfer the ribs to a wooden cutting board, apply a final light brush of glaze, and let them rest covered loosely for 5 to 10 minutes before slicing between the bones.

What to Serve with Grilled Honey Glazed Ribs

  • Classic Potatoes: Pair these sweet and savory ribs with crispy oven-baked potato wedges, fried potatoes, or a chilled dill potato salad.
  • Crunchy, Tangy Sides: A crisp coleslaw, refreshing summer salad with a light vinaigrette, or crunchy homemade sun pickles cut through the richness of the sweet pork.
  • Corn on the Cob: Toss ears of sweet corn right onto the grill grates alongside the ribs during the final 15 minutes of cooking.
  • Ice-Cold Drinks: A crisp lager, pale ale, or iced sweet tea complements the smoky honey glaze perfectly.

Uncooked ribs can be stored in the refrigerator for 3-5 days. Leave them in their original packaging or wrap them tightly in plastic wrap to prevent air exposure.

Leftover ribs will keep for 3-4 days in the refrigerator. Store them in an airtight container or wrap them tightly in plastic wrap or aluminium foil.

Pro Tips for the Most Tender Grilled Ribs

  • Remove the Membrane (Silverskin): Flip the rack bone-side up and slide a butter knife under the thin, translucent membrane. Grab it with a paper towel for a secure grip and pull it away in one clean strip. Removing it ensures the rub penetrates deep into the meat and keeps the ribs tender rather than chewy.
  • Use Indirect Heat on the Grill: On a charcoal grill, arrange hot coals on one side and place the wrapped ribs on the cooler side (two-zone cooking). On a gas grill, turn off the burners directly beneath the meat. This allows the packet to braise evenly without scorching the bottom.
  • Why the Parchment Layer Matters: Wrapping first in baking paper (parchment) creates a natural non-stick steam barrier that prevents the sugary rub from sticking to metal or burning against the hot foil.
  • Watch the Final Sear Closely: Honey and brown sugar caramelize rapidly once exposed to direct heat. Keep the grill lid off during the final 8-10 minutes, turn the ribs frequently, and brush on the glaze in thin layers to avoid blackening.
  • The Bend Test for Doneness: Pick up the rack from the center with tongs. If the rack bends easily and the surface meat begins to crack slightly, the ribs are fully tender and ready for glazing.

Frequently Asked Questions

Why do you put baking paper inside the aluminum foil?

Baking paper acts as a protective non-stick buffer. It prevents the ribs and sweet marinade from sticking to the aluminum foil while trapping the natural juices tightly inside, ensuring maximum tenderness without tearing the meat when unwrapping.

When should you put honey on ribs so it doesn't burn?

Honey has a high sugar content and burns easily over open flames. Apply a thin coating at the start to help the dry rub adhere while inside the foil packet, but save the primary honey glaze for the last 8 to 10 minutes of direct grilling over medium coals.

How do you know when pork ribs are done on the grill?

Look for three key indicators: the meat pulls back about ¼ to ½ inch (1 cm) from the bone tips, the rack bends and cracks slightly when lifted with tongs, or a meat thermometer inserted into the thickest part between bones reads between 90°C and 95°C (195°F to 203°F).

Can you make these honey glazed ribs ahead of time?

Yes. You can season the ribs and let them marinate tightly wrapped in the refrigerator for up to 24 hours before grilling. You can also complete the foil-cooking phase ahead of time, chill the wrapped packet, and finish the final glazing sear over hot coals right before serving.

How do you store and reheat leftover grilled ribs?

Store leftover ribs in an airtight container in the refrigerator for 3 to 4 days. To reheat without drying out, wrap the ribs in foil with a tablespoon of water or apple juice and warm them in a preheated oven or indirect grill at 150°C (300°F) for 15-20 minutes until heated through.

Notes

  • Silverskin Removal: Always peel off the thin translucent membrane on the bone side using a paper towel for grip to ensure maximum tenderness.
  • Oven Alternative: If outdoor grilling is unavailable, bake the double-wrapped packet in a preheated oven at 190°C (375°F) for 1.5 hours, then unwrap and broil on high for 5-7 minutes to caramelize the glaze.
  • Storage & Reheating: Store leftovers in an airtight container for up to 4 days. Reheat wrapped in foil at 150°C (300°F) for 15 minutes to keep the meat juicy.

I wouldn’t have thought 200c counts as low. I was looking for something more like 140 or 150, and 3-4 hours
