Meltingly tender roasted chicken legs baked in a glass casserole dish with sweet bell peppers, beer, rich tomatoes, honey, and sweet paprika paste. A foolproof one-pan dinner with a luscious savoury-sweet pan sauce.

1 mixing bowl large
1 Heavy-duty aluminium foil
Ingredients
1kgchicken legsbone-in, skin-on drumsticks or whole legs
1tablespoonpaprika pastesweet, Édes Anna or Piros Arany
1tablespoonhoneymild floral honey
3tablespoonsunflower oildivided
1teaspoonsea saltkosher
1teaspoonground pepperfreshly ground

1tablespoonthymedried, or fresh thyme leaves
½teaspoonvegetable mixseasoning

240mlbeermild lager or pale ale

Instructions
1. Season & Prep
Pat the chicken legs dry with paper towels. Place them into a large mixing bowl.
Add the sea salt, black pepper, onion powder, dried vegetable seasoning, thyme, sweet paprika paste, honey, and 2 tablespoons of sunflower oil.
Thoroughly massage the spices and paste into the chicken legs by hand until evenly coated. (Optional: Marinate in the fridge for 30–60 minutes for deeper flavour).
2. Assemble the Dish
Grease the bottom of your glass casserole dish with the remaining 1 tablespoon of sunflower oil.
Arrange the chicken legs in a single layer. Scatter the sliced sweet bell peppers over and around the meat.
Pour the beer into the bottom of the dish around the chicken.
3. Phase 1: Covered Beer Braise
Tightly cover the casserole dish with aluminium foil.
Bake in a preheated oven at 180°C (356°F) fan-assisted for 30 minutes to gently steam and tenderize the meat.
4. Phase 2: Uncover & Simmer
Carefully remove the aluminium foil and return the dish to the oven at 180°C (356°F) for 10 minutes to allow excess liquid to evaporate.
Pour the canned chopped tomatoes with their juice evenly over the chicken and peppers. Return to the oven for another 25 minutes at the same temperature.
5. Final Caramelization & Resting
Increase the oven temperature to 200°C (392°F) and bake uncovered for a final 20 minutes until the sauce is bubbly, reduced, and the top skin is caramelized.
Remove from the oven and let rest for 5 minutes in the warm pan juices before serving.

Notes
Internal Temperature: For chicken dark meat (legs and thighs), aim for an internal temperature of 79°C–82°C (175°F–180°F) in the thickest part. This ensures the connective tissues fully melt into tender gelatin.
Non-Alcoholic Substitute: Replace the 240 ml (1 cup) of beer with an equal amount of low-sodium chicken broth mixed with a squeeze of fresh lemon juice.
Paprika Paste Alternative: If sweet paprika paste is unavailable, mix 1 tablespoon of sweet Hungarian paprika powder with 1 teaspoon of sunflower oil.
One-Pan Potato Shortcut: Peel and quarter 4–5 medium potatoes and place them around the chicken legs in Step 2. They will braise directly in the seasoned beer and tomato gravy.
Storage & Reheating: Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat covered in an oven at 175°C (350°F) for 15 minutes with a generous spoonful of pan sauce.
