Equipment

1 Cosori Air Fryer XXL or any basket-style air fryer
1 Sheet Air Fryer Parchment Paper Liner
1 Instant-read digital meat thermometer
1 Pair Kitchen Tongs silicone-tipped

Ingredients

250 g ribeye steak at least 2.5 cm thick, matured for 28 days
½ teaspoon sea salt flakes, such as Maldon
¼ teaspoon ground pepper freshly ground
⅛ teaspoon garlic powder dried
½ teaspoon olive oil spray or avocado oil spray

Instructions

Temper & Dry: Remove the ribeye from the refrigerator 20 to 30 minutes before cooking to bring it to room temperature. Thoroughly pat the entire surface and sides dry using paper towels to remove surface moisture.
Season: Give both sides of the steak a light spritz of olive oil spray. Season evenly with the sea salt flakes, freshly ground black pepper, and garlic powder, pressing the seasonings gently into the beef.
Preheat the Air Fryer: Preheat your air fryer to 205°C (400°F) for 4 minutes with an empty basket. (Never place parchment paper inside while preheating).
Line and Add Steak: Once preheated, carefully lay the parchment paper liner into the bottom of the hot basket and spritz with a touch of oil. Immediately place the seasoned steak on top of the paper to hold it securely in place.
Air Fry: Cook at 205°C (400°F) according to your desired doneness:
- Rare: 6 minutes (Internal: 49°C / 120°F)
- Medium-Rare: 7 to 8 minutes (Internal: 54°C / 130°F)
- Medium: 8 to 9 minutes (Internal: 60°C / 140°F)
- Well-Done: 10 to 11 minutes (Internal: 71°C / 160°F)(Optional: Turn the steak over at the halfway mark if you prefer an even deeper sear on both sides).
Rest & Serve: Transfer the steak to a warm plate, top with a knob of butter if desired, and let it rest undisturbed for 3 to 4 minutes. Pour any savoury juices collected on the parchment paper back over the steak, and serve immediately alongside fresh cherry tomato salad and a cold drink.

Notes

Parchment Safety Tip: Only add parchment paper after the basket has finished preheating, and immediately weigh it down with the steak. Loose paper can blow into the upper heating element and burn.
Internal Temperature & Resting: Meat continues to cook while resting (carryover cooking). Always pull the steak out of the air fryer when it is 2°C to 3°C (about 5°F) below your target doneness temperature.
Steak Thickness Matters: If your steak is thinner than 2 cm (¾ inch), reduce the total cooking time by 1 to 2 minutes to prevent overcooking the center.
Cosori Preset Option: If using a Cosori air fryer, you can also select the Steak preset, adjust the temperature to 205°C (400°F), and set the timer directly.
