Ultra-juicy oven-roasted turkey thighs with golden crispy skin! Slow-roasted over sweet apples and braised in beer for incredible flavor with minimal effort.
Season and Marinate: Place the turkey thigh into a large bowl. Sprinkle evenly with salt, black pepper, garlic powder, thyme, marjoram, and vegetable mix. Drizzle with 2 tablespoons of sunflower oil and rub the spices into the meat thoroughly. Cover and let marinate at room temperature for 30 to 60 minutes.
Arrange the Tray: Preheat your oven to 180°C Fan / 350°F / Gas Mark 4. Drizzle 1 tablespoon of sunflower oil across the bottom of a roasting tray. Place the marinated turkey thigh skin-side up in the center. Arrange halved apples around the meat and pour the beer into the bottom of the tray.
Slow Roast Covered: Cover the tray tightly with aluminum foil. Bake for 50 to 60 minutes to tenderize the dark meat.
Uncover and Crisp: Remove the foil, baste the skin with a spoonful of hot pan juices, and roast uncovered for another 20 to 30 minutes until the skin is golden and crispy.
Rest and Serve: Verify internal temperature reaches 175°F–180°F (80°C–82°C) near the bone. Let the meat rest on a cutting board for 10 minutes before carving. Serve with mashed potatoes, roasted apples, and pan gravy.

Internal Temperature: Unlike turkey breast, dark meat turkey thighs are most tender and flavorful when cooked to 175°F–180°F (80°C–82°C), which allows connective tissue to fully break down.
Alcohol-Free Swap: Replace the 330 ml of beer with an equal amount of rich chicken stock or turkey broth plus 1 tablespoon of apple cider vinegar.
