Equipment

  • 1 electric mixer
  • 1 mixing bowl
  • 1 ceramic baking dish
  • 1 spatula

Ingredients

  • 4 pieces apples
  • 300 g wheat flour
  • 2 tsp baking powder
  • 3 pieces eggs free range
  • 150 g sugar caster
  • ½ tsp salt kosher
  • 80 g unsalted butter melted
  • 180 ml milk
  • 1 tsp cinnamon powder
  • 1 tbsp sunflower oil or vegetable oil

Instructions

  • Beat the eggs with added sugar and salt in a mixing bowl until you got a white and foamy composition.
  • Add the melted butter, stirring until it is incorporated, then the vanilla essence and the milk, mixing further.
  • Add the flour and the baking powder, which you sift over the liquid composition to make it more aerated.
  • Mix them until the flour is incorporated without lumps, and you get a batter like a soft and fluffy cream.
  • Remove the spine of the apples and cut them into 2-2.5 centimetres (1 inch) thick pieces.
  • Add the apples and the cinnamon powder to the batter and gently mix them with a spatula or wooden spoon into the dough.
  • Grease the baking dish with sunflower oil and pour the entire composition into it. Level it with the spatula and arrange the apple pieces to be uniform everywhere.
  • Heat the oven to 180 C (356 F) and bake the dough for 30-35 minutes.
  • Serve warm apple cake bars, powdered with sugar or toppings like whipped cream, vanilla ice cream, or caramel sauce.

Notes

Leave the apple parts bigger and don’t slice or grate them so that you can feel their texture better in the apple cake when you bite into it.
You can test the cake with the toothpick to see if it is well done, but the apple cake will have a beautiful copper crust on top.
The best apples for this cake are Granny Smith, Honeycrisp, Braeburn or Pink Lady Apples because they are firm and hold their shape when cooked.
