Instructions
Prep: Preheat oven to 170 C fan (180 C conventional / 350 F). Line an 8.5 x 4.5 inch loaf pan with parchment paper.
Whip Egg Base: In a large bowl, beat eggs, granulated sugar, vanilla sugar, and salt with an electric mixer for 2–3 minutes until pale and fluffy.
Mix Yogurt: Add Greek yogurt and whisk until completely smooth.
Add Dry Ingredients & Flavorings: Sift in flour, baking powder, and cocoa powder. Add vanilla and orange extracts. Gently fold until combined (do not overmix).
Add Oil: Pour in sunflower oil and gently fold until the batter turns smooth and glossy.
Fold Mix-ins: Gently fold in dark chocolate chips (and optional dried fruits).
Bake: Pour into prepared loaf pan. Bake for 35–40 minutes until a toothpick inserted in the center comes out clean or with a few moist crumbs.
Cool: Cool in pan for 5–10 minutes, then transfer to a wire rack using the parchment paper sling to cool completely.

Avoid Overmixing: Once you add the flour and cocoa powder, switch to a spatula and fold gently. Overmixing the flour activates too much gluten, which can make the loaf dense instead of tender.
Storage: This cake stays fresh and moist for up to 3 days in an airtight container at room temperature, or up to 7 days in the refrigerator.
Add-ins: Feel free to toss the chocolate chips in a teaspoon of flour before folding them in to ensure they stay evenly distributed and don't sink to the bottom.
