Cut the pork belly into appropriately sized pieces. Aim for approximately 6 cm (2 inches).
Combine the pork belly bites in a bowl with sea salt, freshly ground pepper, paprika, Chinese five spice, demerara sugar, and olive oil.
Use your hands to mix everything well, making sure all the pork belly pieces are covered in the spice blend.
Preheat your air fryer to its maximum temperature. Line the air fryer basket with parchment paper and lightly spray with olive oil.
Arrange the seasoned pork belly bites in a single layer, allowing for even air circulation, and air fry at 205°C (400°F) for 15 minutes.
Turn each piece of pork belly over and brush them with any marinade left in the bowl. Put them back in the air fryer at 205°C (400°F) for just 5 more minutes.
Arrange the pork belly bites on a platter and serve it with crisp lettuce leaves, and a variety of dipping sauces.

For the best flavour, let the belly bites marinate for at least 15-20 minutes, giving the spices time to really soak in.Air fryers can be a little different, so if they're not quite done or you want them extra crispy, just give them a few more minutes.While most people recommend eating them warm, they're surprisingly good cold, like the day after.
