Equipment

1 Large skillet frying pan (for the meat sauce)
1 Large stockpot for boiling potatoes
1 Glass or ceramic baking dish deep 9x13-inch (approx. 23x33 cm)

Ingredients

For the Potatoes & Base:

1.5 kg potatoes waxy or all-purpose such as Yukon Gold or Maris Piper, unpeeled
2 tablespoon sunflower oil for coating the baking dish
1 tablespoon breadcrumbs fine dry
1.5 teaspoon sea salt fine, split: 1 teaspoon for boiling water, ½ teaspoon for potato layers

For the Savory Pork Sauce:

900 g lean minced pork ground pork
2 pieces onions medium-size, yellow, finely diced
50 ml sunflower oil or olive oil
250 ml tomato passata smooth tomato purée
100 ml water warm
1 tablespoon marjoram dried
½ tablespoon thyme dried
½ tablespoon vegetable mix from soups such as Vegeta or vegetable bouillon powder
1 teaspoon ground pepper freshly ground
½ teaspoon sea salt fine

For Layering & Cheese Topping:

250 ml tomato passata split: 50 ml over meat layer, 200 ml over top potato layer
½ teaspoon sea salt fine, for top potato layer
40 g cheddar cheese freshly grated
15 g Grana Padano or Parmesan (finely grated)

Instructions

1. Boil and Prepare the Potatoes

Place whole, unpeeled potatoes in a large pot and cover with cold water. Add 1 teaspoon of sea salt.
Bring to a boil over medium-high heat and cook for 35 to 40 minutes, until a paring knife inserts easily into the center without the potatoes splitting apart.
Drain thoroughly and set aside to cool until safe to handle. Peel off the skins and leave whole.

2. Cook the Minced Meat Sauce

Heat 50 ml sunflower oil in a large skillet over medium heat. Add chopped onions and ½ teaspoon salt; sauté for 2 to 3 minutes until soft and translucent.
Add the minced pork, breaking it apart with a wooden spoon. Cook for about 5 minutes until no longer pink.
Pour in 250 ml tomato passata and 100 ml warm water. Stir in the dried marjoram, dried thyme, vegetable seasoning, and black pepper.
Simmer gently over medium-low heat for 12 to 15 minutes, stirring occasionally, until the liquid reduces and the sauce thickens. Remove from heat.

3. Assemble the Casserole

Preheat the oven to 200°C (392°F / Gas Mark 6).
Grease a deep 9x13-inch baking dish with 2 tablespoons of sunflower oil and sprinkle breadcrumbs evenly over the bottom.
Slice half of the boiled potatoes into 5 mm (¼-inch) rounds directly into the dish to form an even base. Season with ½ teaspoon salt.
Spread all the minced pork sauce evenly over the potatoes. Drizzle 50 ml tomato passata over the meat.
Slice the remaining potatoes in an even layer on top. Sprinkle with ½ teaspoon salt and pour the remaining 200 ml tomato passata over the surface.
Scatter grated Cheddar and Grana Padano evenly over the top.

4. Bake and Rest

Bake uncovered on the center rack for 30 minutes, until the cheese topping is melted, bubbly, and deep golden-brown.
Remove from the oven and let rest for 10 to 15 minutes before slicing into neat squares to allow the layers to settle. Serve hot.

Recipe Notes

Potato Selection & Boiling: Choose medium all-purpose or waxy potatoes (such as Maris Piper, Yukon Gold, or Desirée). Always boil them whole in their skins—this prevents the potatoes from absorbing excess water and turning soggy in the casserole. Test with a paring knife: it should slide in easily with gentle resistance in the center.
Avoid Watery Moussaka: Simmer the minced pork until the liquid has reduced into a thick, spoonable sauce before assembling. When transferring the meat to the baking dish, leave behind any pooled grease in the skillet.
The Slicing Secret (Don’t Skip Resting!): Let the baked moussaka rest at room temperature for 10 to 15 minutes before cutting into it. Cutting straight from the oven causes the juices to run and the layers to slide apart; resting allows the starch and cheese to set for clean, picture-perfect squares.
Traditional Romanian Topping Variation (Cu Smântână și Ou): If you prefer the old-fashioned Romanian finish instead of melted Cheddar, whisk 2 large eggs with 200 g (¾ cup) sour cream (smântână) and a pinch of salt. Pour this custard over the top layer of potatoes during the final 15 minutes of baking until set and golden.
Baking Dish Size: A standard 9x13-inch (approx. 23x33 cm) deep heatproof glass or ceramic casserole dish works best. The breadcrumbs scattered over the oiled base prevent the bottom potato slices from sticking and absorb excess pan juices.
Make-Ahead: You can assemble the dish completely up to 24 hours in advance. Cover tightly and refrigerate. Take it out 30 minutes before baking to take the chill off the dish; if baking directly from cold, add 8–10 minutes to the baking time.
