These grated apple fritters are the perfect way to use all the extra apples in your kitchen. They’re easy to make and incredibly delicious, making them a favourite for breakfast, dessert, or even a snack.
Peel the apples, remove their spines and grate them on the large grater. Squeeze the juice of half a lemon over them.
In a bowl, add the solid ingredients: flour, baking powder, sugar, vanilla sugar and a little salt and mix them.
Add the eggs individually and mix them with a wooden spoon or whisk to incorporate them into the flour.
Add the grated apples with all the juice and incorporate them into the dough, this time by hand.
Heat the sunflower oil (or other vegetable oil) in a pan.
Form round pieces of this batter with a spoon, and fry, preferably at a medium temperature.
After a minute or two, you can turn to the other side and continue to fry for about another minute after they have become copper colour.
When the fritters are done, take them out on a plate covered with a paper towel to absorb the excess oil.
Serve the apple fritters while still warm and crispy for the best texture and flavour.

Do not fry too many fritters at once because the oil cools down, and they will be soaked in oil.The apple fritters can be served in various ways, like sprinkled with sugar or cinnamon sugar, with toppings like strawberry or apricot jam, cream, ice cream, honey or maple syrup.
