GRATED CARROTS AND SLICED CABBAGE
-Slice the cabbage as thin as possible and grate the carrots.
-Mix them in a bowl and season with sea salt.
-Put them aside for five minutes.
-Make homemade mayonnaise, mixing egg yolks, mustard and sunflower oil.
-Add Greek yoghurt, lemon juice, ground pepper, sugar and mix.
-Pour the dressing over the cabbage and mix them lightly.
-Add dried thyme, taste if it needs more salt and put it in the fridge for 15 minutes.

-Serve as a salad or side dish with various chicken, pork or beef recipes, steaks or fried in the oven or grilled.
