One day I remembered an old recipe, which marked my childhood and which I want to share with you. Is about the best sweet cornbread recipe in a world, with cottage cheese and yoghurt, sprinkled with honey, so delicious.

  • 250 g cornmeal
  • 150 g wheat flour
  • 1 tbsp baking powder 1 sachet
  • 400 g cottage cheese or cheese cream
  • 4 pieces eggs
  • 200 g caster sugar
  • 100 g unsalted butter
  • 2 tsp vanila sugar or 1 tbsp vanilla extract
  • 400 g Greek yoghurt
  • 1 piece lemon zest


  • In a bowl, put the egg yolks, butter and sugar and mix everything, with a hand mixer, until you get a homogeneous paste. Add the yoghurt, cottage cheese, vanilla sugar (or vanilla essence), lemon zest and continue mixing.
  • Separately, in another bowl, mix the two types of flour (corn and wheat) together with the baking powder. Pour the flour over the rest of the ingredients and mix until incorporated.
  • Take the egg whites and mix them until we get a foam. Pour the foam over the dough and mix gently with an egg beater, until completely incorporated. Let the composition to rest for about 30 minutes to soften the cornmeal.
  • Took a baking tray, which we lined with baking paper, and pour the composition into the tray. With a spatula, level the soft dough so that it is evenly spread throughout the tray. Heat the oven to 180 degrees, put the tray and bake for about 35-40 minutes, until we get a golden colour.
