Print Recipe
- 2 pieces duck legs
- 4 cloves garlic
- 1 tsp sea salt kosher
- 1 tbsp duck fat
- ½ tsp ground pepper freshly ground
- 1 tsp marjoram dried
- 1 tsp paprika
Chop the garlic cloves, put them in the mortar and add a spoonful of coarse sea salt. Crush them well and rub them with the pestle until you obtain a garlic paste.
Add the freshly ground pepper, paprika, marjoram and duck fat. Mix the ingredients with a spoon until you get a homogeneous paste.
With this paste, grease the duck legs, massaging them well on all sides. Cover them with foil and put them in the fridge for at least an hour.
Place only the thighs in the basket with the skin down without adding oil. Set the air fryer to a temperature of 150 C (302 F) and cook for 35 minutes.
Turn the thigh’s skin side up and fry them at the same temperature for another 35 minutes.
Serve the air fryer duck legs with mashed potatoes, cranberry chutney, or a fruit compote.
You can use sunflower or olive oil if you don’t have duck lard.
To get the tastiest duck legs in the air fryer, keep them in the refrigerator overnight.
If you think the skin is not crispy enough, put it back at a temperature of 200 C (392 F) for two minutes.
