Grated Vegetables

Grate the zucchini on the large grater, continue with the leeks and peppers, add the sea salt, mix them, and let sit for a few minutes.

Squeezed Vegetables

After a few minutes, squeeze the water from them well with our hands, keeping them as dry as possible, and they will be easier to shape.

Add Ingredients

Put the squeezed vegetables in a bowl and add the rest of the ingredients, i.e. eggs, grated cheddar cheese and breadcrumbs.

Mixed Ingredients

Season with ground pepper, vegetable mix, garlic powder and chilli flakes. Mix everything well by hand until it gets a homogeneous paste.

Make the Balls

Form balls, the size of golf balls by hand, flattening a little to fry on a larger surface. Try to make them the same size to fry in the same way.

Frying Zucchini Balls

Fry them on medium temperature for 2-3 minutes until they get a copper colour, and then turn them on the other side for another 2-3 minutes.

Fried Zucchini Balls

After frying them, take them out in a bowl lined with a paper towel and let them cool a little and drain the excess oil, and continue to fry the rest.

Serving the Zucchini Balls

Serve it warm, along with a yoghurt dip made from Greek yoghurt with sweet chilli sauce, sea salt, ground pepper, lemon juice and olive oil.
