Pan-fried rainbow trout recipe is it is one of my favourites, served with potatoes or polenta and with a garlic sauce, it is amazing.

Preparing the Trout

Made a few notches on the thicker side of the fish, season with sea salt and freshly ground pepper and massaged them well to enter the incisions.

Flouring the Trout

Mix the wheat and cornflour, roll the fish through it to cover all the parts well, and gently shake off the excess flour.

Frying the Fish

Heat the sunflower oil and the butter in a frying pan and fry the rainbow trout at medium temperature, 3-4 minutes on each side. 

Make a Garlic Sauce

Put the garlic cloves and the sea salt in a mortar, crush well with the pestle, add a little oil and ground pepper, lemon juice and mix until you get a paste.

Serving the Rainbow Trout

Serve the fried rainbow trout with polenta and this garlic sauce, or you can also eat it with french fries, mashed potatoes or rice.
