In my opinion, the best mushroom soup recipe is the one from Hungarian cuisine with pieces of mushrooms and small homemade egg noodles.

Frying Onion and Bell Pepper

Heat the oil in a pot and sauté the chopped onion for a minute over medium heat, add the diced pepper, the salt, fry for another minute.

Add the Mushrooms

Add the sliced mushrooms, mix and season with fresh thyme that you chopped finely and Hungarian sweet paprika.

Flour on the Mushrooms

Add the flour, mix and let it absorb for a minute from the liquid; the flour will have the role of thickening the soup a little.

Boiling Mushroom Soup

Pour the water, season with sea salt, freshly ground pepper, vegetable mix for soups and simmer over medium-small heat for about 20 minutes.

Noodles Batter

In a bowl, break a fresh egg, and add the wheat flour. With a fork, mix everything well until you get a kind of paste, thin but not liquid.

Add Noodles to the Soup

With a teaspoon, add small amounts of dough in the soup, which in contact with hot water will swell a little and float to the surface.

Boiling  the Noodles

Boil the dumplings for about five minutes on low heat, add the juice of half a lemon, a tablespoon of chopped parsley and ready. 

Serving the Mushrooms Soup

Serve warm with a bit of hot chilly if you like, and a tablespoon of sour cream or Greek yoghurt will make it more creamy and tasty.
